Fresh Fish, Dry Aged Steaks, Cured Meats, Farmstead Cheeses and Artisanal Chocolates
Cheese & Crackers sends members of staff to trade shows, farms, cheesemakers and other small producers to learn first hand how they craft their cheese, salami, cured meats & chocolates. We also conduct ongoing continuing education with our fish program.
The Wisconsin milk board invited Mindy from Cheese & Crackers to a week long tour of Wisconsin's cheesemakers.
She started with a Cheese Pairing Seminar at The Old Fashioned. Following the cheese pairing Mindy met with one of Wisconsin certified Cheesemasters (there are over 1200 certified/registered cheesemakers in Wisconsin, only 57 are certified CheeseMasters, the certification process is huge. Just so far today she has toured Wisconsin's only remaning Limburger and Liederkranz prducer (look for these to showo up at cheese and crackers soon!). Following her introduction to Limburger and Liederkranz, she toured Uplands Cheese, Chalet Cheese and Emmi Roth - filling the day with lectures, tastings and more education. Monday finished with a trade show where Mindy was able to meet with BelGioioso Cheese – Guy Vanes, Nordic Creamery – Al Bekkum, Maple Leaf Cheese – Meghan Daubert, Brunkow Cheese - Joe Burns, Sartori Foods – Cari Hogan, Holland's Family Cheese- Ena Langendijk, Pasture Pride – Bentley Lein & Mary Bess Michaeltz, Swiss Valley/Faribault – Gabe Wand & Kelly Panther, Saxon Creamery – Jerry. The following day saw Mindy visiting Crave Brothers (which we proudly stock at Cheese & Crackers). We knew their cheese was fanstastic; what we never knew was how deeply committed to being green these guys are today. Following Crave Mindy headed over to Cambria WI for an Amish tour and Tasting at the Salemville Plant before heading over to the Wisconsin Dells for a lunch stop.
Next she went to the Green Cheese Plant at Cedar Grove Cheese. The wet floors you see are intentional - puddles of disinfectent are placed on the floor so that employees continously are stepping to disinfectent. Mindy and I have been around animals and food service our entire lives and these are the cleanest barns/food manufacturing we have ever seen. Stunningly clean and bright all the way around.
Finally Mindy heads over to Carr Valley Cheese for a breakfast and seminar on their cheese.
